"One for the Money" or "Undead and Unwed" Both are easy and fast reads.

I really loved Suzanne's Diary for Nicholas by James Patterson. It's a good love story but sort of a tear jerker too, though. It's fairly short.

I also liked "Wake" by Lisa McMann which is also a short book.

Those are the only two I can think of off hand that arent part of a series of several books.
