Yes, you can do it early like that. When you reheat, only go for a couple hours, keep the temp on low and watch it, especially if you use a tomato-based sauce (the tomato burns).

And you absolutely MUST have coleslaw. You put it on the sandwiches like a condiment. Get the white kind.

For the sides, green beans and/or baked beans, and some soft rolls (the squarish pull-apart ones). For the sandwiches, get plain burger-style buns. It's not very good with seeded buns.

When I do pulled pork, I also try to have something somewhat healthy just for balance, like a small vegetable tray. With ranch for dipping. Because ranch is soooooo dang healthy.
