since a lot of people said it looked tasty, i am posting the recipe. this is for two people, but you can always double it.
what you will need:
one small package of stewing beef
1/4 package baby carrots, fresh cut
1/4 of a sweet onion
2 red potatoes
1 can beef broth (i like the 99% fat free)
1/4 teaspoon dried thyme (i didn't have thyme and used oregano, still delicious)
1 bay leaf (even omitted it is delicious)
1/4 teaspoon black pepper
water
cooking spray
spray a saucepan with cooking spray and brown the beef on medium heat. i didn't brown them all the way, i left them pink in the middle.
while the beef is browning, pour the beef broth in the crock pot. chop the onions, but don't dice them. chop the potatoes into about a square inch size. add to the broth. add spices.
once the beef is done browning, add to the crock pot. fill the crock pot the rest of the way to the top with water. start cooking the stew about 4 hours before you plan to eat it at the least. cook on high heat unless it boils, then reduce the heat.
